Coconut Chess Pie Recipe

I know there's times towards payday that things get a little tight in the grocery department. Here's a pretty easy dessert that you can fix that uses ingredients you have laying around. You might have to make a quick trip to Krogers to pick up the pei shell...but, the rest is usually part of your pantry. I really like "chess pie" and make a lot of these.

Ingredients

1 stick butter (4 ounces)
1 1/2 cups granulated sugar
3 eggs, beaten
1 cup flaked coconut
2 teaspoons vinegar
1 1/2 teaspoons vanilla

Instructions
---

Combine butter and sugar in saucepan; heat, stirring, until melted and
well blended. Combine all ingredients and mix. Pour into an unbaked
pie shell. Bake for about 1 hour at 350°, or until a knife inserted
in center comes out clean.
