Holiday Tortellini Soup

Yield: 8 servings

4 TBS olive oil
2 oz pancetta or bacon, finely diced
1 medium onion, finely chopped
3 garlic cloves, chopped
1 can chicken broth (I used low sodium organic boxed)
2 tsp Italian seasoning
1 pkg (9 oz) refrigerated cheese tortellini
1 can crushed tomatoes (I use store brand “Italian”) in puree
8 oz fresh spinach, rinsed and chopped

Salt & pepper to taste

1 cup freshly grated Parmesan or Romano cheese

Heat the oil in a Dutch oven over medium heat. Add pancetta.
Cook until crisp. Add onion; cook 3-4 minutes or until tender.
Add garlic; cook 1 minute longer. Add broth and Italian
seasoning; bring to a boil and simmer for 5 minutes.

Meanwhile, cook tortellini according to package directions;
drain. Add cooked tortellini to soup mixture. Stir in crushed
comatose and simmer 5 minutes. Add spinach and cook
just until wilted. Season with salt and pepper. Garnish with
Parmesan cheese.

This is easy and quick. It freezes well (IF there are any
leftovers!). It also doubles well.

Hi Amy,

Welcome to the Heartland Forum. We have lots of great information here and exchanging recipes is just one of them. Thanks for keeping your other half in line. I know it must be a hard job.

I do have one question about the recipe above...what or who is "crushed comatose" ?? :) And how did it get comatose? :) I don't see anything in the ingredients that would knock something out. :)

Wow - gonna try this recipe for sure. I have 4 grocery stores in town, hope one of them has the crushed comatose :)

Crushed comatose is what you are when you've had one bowl of this and while heading back for seconds, it's all gone....you are crushed and comatose from it's deliciousness!!!!
Amy, you are going to have me working in the kitchen all day!!!!!!! (that's not a good thing!!!)

Hi Dave's Amy,

I know a few Dave's with Amys - but not sure which one you are!

Anyway, we (Kevin, Nelly and I) made this tonight. John and Deb joined us and the 5 of us really liked it.

We improvised a bit, goofed a bit - but we really liked it. Thanks for sharing!
