RECIPE: Cakes / Chocolate Éclair Cake

Ingredients

Cake:

  • 1 - box graham crackers
  • 2 - packages French vanilla pudding
  • 3 - cups milk
  • 1 - 9 oz package Cool Whip
Frosting:
  • 3 - squares Chocolate
  • 2 - tablespoons butter
  • 3 - tablespoons Karo Light Corn Syrup (clear type)
  • 3 - tablespoons milk
  • 2 - cups powdered sugar
  • 1 - teaspoon vanilla

Preparation Instructions

  • Butter 9 x 13 dish bottom and sides
  • Line the bottom with Graham crackers
  • Mix pudding mix and 3 cups of milk for 3 minutes
  • Add cool whip just to mix
  • Pour 1/2 of pudding mixture in
  • Add another layer of graham crackers
  • Pour the remaining pudding mixture over the second layer or graham crackers
  • Add a third layer of Graham crackers
  • In a second bowl melt chocolate and butter in microwave.
  • Add Karo syrup, 3 teaspoons milk, powdered sugar, and vanilla
  • Beat well and pour over top layer of graham crackers
  • Chill at least 24 hours
  • After topping hardens cover with buttered foil

One question Jim. If you pour in one half of the pudding mix and then add a second layer of graham crackers -- then pour the white syrup, milk, powdered sugar, vanilla mix over the graham crackers -- what do you do with the second half of the pudding mix?? Sit an eat it while waiting for the other dish to chill??:rolleyes::):)

Thanks for letting me know Keith. I have sent a note to Carol to find out where I may have left out a step. I would imagine it goes in with the syrup, milk etc.

Ray - good one. Not sure what we're making but this recipe is tasty. Carol made it for a dessert gathering at their RV during the Sweetheart rally.

Another good question John. I don't know. I will find out and get it clarified though. If I had to guess, I'd say sweetened condensed milk?

Okay - Nancy says White Syrup means Karo Syrup. Maybe....

I sent a second email off to Carol. Guess I should kitchen test recipes before I post them :) Did I say this was great?

I think you layer it pudding graham crackers then pudding and chocolate. Nancy is right Karo .. It sounds very good I will have to try it.. Jim I do have a ? what size box of pudding they have two deferent sizes..

I personally think you need to come to Hilton Head and make this recipe for us. This one is way to complicated for me to follow. I need your help first time through. :)

Is this the same one on fb?
