RECIPE: Eggs / Martha's Breakfast casserole

Ingredients

  • 1 pkg regular sausage (not links)
    1 container egg-beaters
    1 pkg (large) frozen hash browns
    2 cups shredded cheese
    Salsa

Preparation Instructions
=============================
  • Heat oven to 425.
  • Spray 9x12 or equivalent cooking container with non-stick spray.
  • Brown sausage well & drain off fat.
  • Put aside 1/2 cup cheese
  • Place one layer of potatoes in pan followed by one layer of sausage & one layer of cheese.
  • Continue layering until all sausage, hash browns & 1 1/2 cups of cheese have been used.
  • Pour container of egg-beaters over contents of pan & shake to settle.
  • Bake covered with foil for around 45 minutes or until well set.
  • Remove foil, top with salsa to taste & remaining cheese.
  • Place back in oven & cook until cheese is melted (5-10 minutes)
  • Let stand for 10 minutes

Tips

[*] If there are leftovers, I put them into portion sized containers and either freeze for a quick breakfast or supper another day or just refrig for up to 3 days.

Pitfalls
=============================
[*] Don't use sage flavored or any other flavored sausage. Just use the sausage you would use to make sausage patties.

Variation Ideas
=============================
[*]This is also good with Turkey sausage.
[*] You can make meatless also.
[*] For extra zip, I'll use the southwestern style hash browns and egg beaters.
[*] Don't like salsa? Just chopp some tomato.

It is - usually if anyone is around, there are seldom leftovers. Caught one of our married sons with a "to go" container & a spoon BEFORE anyone even began eating. Enjoy it & experiment with it. That's how I came up with it in the first place.

We used to do a similar recipe when I worked with the Boy Scouts, we added chopped green peppers & onions.

The original recipe called for green peppers, onions, and fresh tomato, but one time I was doing it on the spur of the moment and didn't have those, so substituted salsa. Happened to have the Southwestern Egg Beaters on hand, so used those & the results became our family & friend's favorite brunch item. Like I said, experiment & make it your own.
