Ingredients

  • 2 lbs sweet potatos or yams
    1 tbs olive oil
    1 tsp table salt
    1 tsp dried oregano
    1 tsp ground cumin
    1 tsp chipotle chili powder
    1/2 tsp ground black pepper
    1 tsp garlic powder
    3/4 cup cream

Preparation Instructions

  • Preheat oven 400 F
    Peal and slice Yams about 3/8" thick
    Toss all except cream to coat evenly and arrange in pie pan or other shallow dish. Cover with foil and bake 30 minutes. Remove foil and pour cream over the top. Continue baking an additional 20 minutes. Allow to cool 10 minutes before serving.

Tips
=============================
There should be some browning around the edges when this is done. The chipoltle chili is fairly hot and has a definite smokey flavor making it the key to this dish.

Pitfalls
=============================
Some people will be disappointed that this is not particularly hot.

Variation Ideas
=============================
Try some diced chipotle in adobo sauce (about 1 tbs) for a real flavor kick if you are used to hot foods.
