Ingredients

  • CAKE:
    1-1/2 C. (3 sticks) unsalted butter @ room temp.
    1 (8 oz) block cream cheese
    3 C. granulated sugar
    6 lg. eggs @ room temp.
    3 C. flour, sifted
    1/4 tsp. salt
    1-1/2 tsp. vanilla extract
    1/4 tsp. almond extract
    Finely grated rind & juice of 1 lime.
    GLAZE:
    1/4 C. granulated sugar
    1/4 C. (1/2 stick) butter
    3 Tbs. lime juice
    1/4 C. powdered sugar (optional)

Preparation Instructions

  • 1. Preheat oven to 325. Grease 12-C bundt pan. Dust pan w/flour to prevent sticking, or spray with Baker's Joy.
    2. To prepare cake: In a large mixing bowl, cream butter, cream cheese & sugar together on low speed for about 10 minutes or until light and fluffy.
    3. Beat in eggs alternately with flour, mixing well after each addition. Add salt, vanilla,almond extract, lime juice and peel. Mix until combined. Be careful not to over beat, which could dry out the cake.
    4. Pour batter into prepared pan. Bake 1-1/2 hrs. or until an inserted toothpick comes out clean. Let cool 10 min., and turn onto cake plate.
    5. To prepare Glaze: Combine sugar, butter and lime juice in a sauce pan & bring to a boil and cook 1 min. Dirzzle over warm cake. Let cool completely before dusing w/powdered sugar.

My oven baked this cake in less time by about 15 min., so check w/toothpick sooner than recipe baking time.
