So I just got my first travel trailer (NT 27RBS). I hope to use it at least a couple of times before winterizing and parking for the winter. But then .... Do I throw a tarp over the top or not?

Never use a tarp. If you are going to cover it, get a breathable fabric cover made for your rig. Calmark is a lot better than ADCO. http://www.calmarkcovers.com/

Our warranty stated on our TT (not HL) using a "tarp" would void our warranty.

Well, there you go. That's why I ask questions, to learn things. It must do more harm than good.
Around here though it seems that about half the rigs I see have standard blue tarps on them and the other half have nothing. I can't recall ever seeing a "real" cover.
