Gluten free camper cooking

Is there anyone out there that has to prepare gluten free meals in their RV? My wife was recently diagnosed with a condition that now requires her to eat gluten free foods. Any advice, or recipes would be appreciated.

LuckyLargo, I came across this company http://www.bumbalooza.com/ at a craft show here inthe Carolina's. They are currently desert oriented but the items we have tried have been very good. They are a young company and just getting into distribution. You may be able to mail order.

I have to eat gluten free (5 years now) and I have fulltimed almost three years while doing it.

At first it seems like a daunting task, but it really isn't that difficult. (A special thank you to my wonderful wife for helping me through it with her patience and great cooking! Also to my fellow campers for being mindful of it).

I have waded through a lot of lousy gluten free products before discovering some of the good one's.
