Here's a super easy white bean chili recipe that works great in the crock pot. It tastes great and is a pretty health conscious dish to boot!

White Bean Crock Pot Chili

1 - Whole Rotisserie Chicken (available from most large grocery stores (Walmart, Meijer, Kroger, etc.))
1 - 48oz jar of Great White Northern Beans
1 - 1.25oz McCormick White Bean Chili Seasoning
1 - 24oz Jar Salsa Mild/Medium/Hot depending on how spicy you like it. I use Meijer Naturals Medium salsa.
1 - 32oz Container of Chicken Broth

Take skin off chicken and debone. Empty beans into strainer and rinse thoroughly. Add all ingredients into crock pot and cook on low for 4 to 6 hours. Enjoy! Give me your opinion if you try it. We love it!

Serving Size = 1 cup.
Calories = 160
Calories from Fat = 25
Total Fat = 2.5g
Saturated Fat = 0.5g
Trans Fat = 0g
Cholesterol = 45mg
Sodium = 1530mg (this can be reduced by using low sodium chicken broth)
Total Carbohydrate = 14g
Dietary Fiber = 4g
Sugars = 2g
Protein = 19g

**I work for a well known university and they had the recipe analyzed for nutritional values if your wondering where I got the information.

I made the less health concious version this week, with the addition of a block of melted pepper jack cheese!

I've had a similar dish. I love it but the hubby isn't a fan. Something to make when he deploys next. I like your version though a a ton easier to make!!
