Suggestions on how to seal kitchen backsplash and bar backsplash in Oakmont?

We just purchased the 2015 325RE Oakmont EEEEEeee! so excited.

As we completed one of the walk through I noticed the back splash felt a little rough and envisioned grease or other liquids splashing back areas in kitchen. I would like to seal those areas and need suggestions.

Polyurethane? Don't like the idea of Plexiglas.

We used the plastic "ceiling tiles" from HD. You can also buy the plastic lite weight 1" backsplash tiles at HD or Lowes. They are self sticking and look great. Let the "mods" begin.

I used ceramic 1" square tiles on the back splash in the bathroom. I did use construction adhesive to install them...did not think that normal tile mastic would hold up bouncing down the road. You do have to grout the tiles though and use silicone grout.
