Made this tonight at the Missouri Rally, and it was such a hit, I decided to post it on here for everyone. I've always made it in a 12" dutch oven (in a smaller one it'll expand & raise the lid). I'm sure it can be made in a regular oven...but I don't have a temp. to cook it at.

JORDAN RIVER MUDChocolate Lovers’ Delight(12 inch Dutch oven)

1 Chocolate cake mix


Mix according to directions, and set aside.


The “MUD”


½ cup baking cocoa
2 cups brown sugar
4 cups hot water
2 tsp. Vanilla
1tsp. Cinnamon (optional)




Topping


1 pkg. Chocolate chips
nuts (optional)
Cool Whip


Line Dutch oven with foil if desired, and preheat. Pour the prepared cake batter into the preheated oven. Mix the “MUD” in a separate bowl, and pour over the batter. Cover the oven (8 to 10 coals on the lid, 8 coals on the bottom), and bake about 40 minutes. Remove the lid about 5 minutes before baking time is up, and sprinkle on the chocolate chips, and nuts. Allow the chocolate chips to melt for a few minutes. Serve with a scoop of cool whip, or vanilla ice cream


Hint: The recipe can easily doubled.
