Title: Aunt Mayme's Famous Tamale Pie
Description:
This is a great casserole dish that is easy and very delicious. In our family, it's the dish that disappears before anything else, even a holiday dinner with this as a side dish. There have been heated disputes as to who gets the last spoonful, Whoever wants some has to get it the first time, there is never any leftovers. This recipe belonged to my Aunt Mayme who was like a second mom.
Ingredients:
1 Large can (28oz) tomatoes, diced
1 Large can Whole Kernel Corn drained
1 Large Onion (white or yellow)
3 cloves Garlic ( more if your dare)
1 lb. Ground Beef
1/2 lb. Sausage ( I use breakfast style )
1 cup vegetable oil
1/4 cube butter ( 2 Tbsp.)
4 Tbsp. Grandma's Spanish Pepper ( or Chili Powder)
Salt and Pepper to taste (optional)
1 green pepper chopped
1 quart milk ( whole or 2% )
2 cups Yellow Corn Meal
3 eggs, beaten
1 large can ripe black olives, pitted and drained
1 bottle Fetzer Gewurztraminer wine ***

2 - 9"x13" pans (aluminum works good)
Directions:
Preheat oven to 300 degrees
In a 6qt. stock pot, cook meat, onion, green pepper, garlic, butter, and oil until completely cooked. Add tomatoes and corn.
Divide mixture into 2 9"x13" cooking dishes.
In a mixing bowl, beat eggs, add milk, cornmeal, and drained olives and blend into even mixture.
Divide mix, pour and spread evenly on top of contents already in cooking dishes.
Bake at 300 degrees for 1 hour.
*** Not to be added to the recipe. Please enjoy as you prepare and/or with the meal!

Long ago our families would gather together for Christmas or Thanksgiving. If the Tamale Pie was there, it was the first to get on the plate. The normal thing to do was get what you wanted of the Tamale Pie. There was NO SECONDS!
