Cherry Salad Dressing

I love making my own dressings for my salads.

After 4 lbs of cherries so far this year I have been putting them on my salads and in the dressing.


5-10 sweet cherries of your choice (I like Bing)
1 tablespoon quality Balsamic Vinegar
1 tablespoon quality light olive oil
dash black pepper
1 packet of Splenda

Pit and mash cherries with a fork -
mix everything together and serve

Some hits ... the dressing cruet that comes with the Italian dressing packets seems to work pretty well for me. It allows me to shake the bejeesus out of the dressing before pouring it over the salad - letting more of the cherry flavor blend in.

I've play around with various oils and vinegars and this combo seems to work better than others.

I recommend it over butter lettuce with goat cheese and toasted walnuts.
