has anyone used the individual control knobs by the hydraulic unit, to operate their slides individually , like only one side or the other ?

Operation is simple. Just turn off the valve for the slide you do not want to move. There should be a switch right at the pump to operate the slides.
Sometimes the valve is difficult to open or close, and when that happens I operate the pump a bit to release some of the pressure.
Don't forget to open the valve once you are done doing what ever you were doing.

We closed the off door slide a few weeks ago during a high wind period to prevent our toppers from flopping
Nice amenity on the BH.

I use them at the storage yard when doing maintenance, opening whatever slide I need to access something inside. Otherwise they're closed while in storage and while in transit. Once we're set up at our seasonal site, I close them again after extending the slides.
