Prepping for winter

My new oakmont has an outside cooking area great for most of the time but not so much for winter. The hot and cold water lines come out of the under belly to the sink exposed to the weather. To keep them from freezing I was thinking about installing some valves but to do so I would have to cut the underbelly open. Liking for ideas.

I don't think I would favor cutting the underbelly.
If possible I would drop it by removing the fasteners along the I-beam frame.

When we had our North Trail I was concerned for the same reason. My solution was to drop the underbelly till I found where the kitchen lines started. I then installed a one way valve on each line, and then a low point drain after that. I cut a hole in the underbelly to accommodate them and then sealed everything back up. I suppose if you were only going to use air to winterize those lines the one way valves would suffice.

When I had some problems that I thought required cutting the underbelly I didn't like the idea so did some research on buying a replacement coroplast underbelly. Forget about it. The width and length needed is almost impossible to find ( I never did but I'm sure it's out there) and from the pricing I saw it would be very expensive. Food for thought before grabbing a knife.
