On my last few rigs the water lines attaching to the shower control valves was always coming loose and it would drip from there. There should be some type of access panel to gain access to those fittings. Honestly since its a fifth wheel, pull down the basement walls to gain access to the under lying water runs.... and see where the water is coming from.

I have a 2008 33ft Heartland Razor 5th wheel toy hauler. My son is using it in Florida and I'm in Michigan. He told me that he saw water running from under the shower into the bedroom. So he went out and shut off the water. He's not very mechanical and neither am I. I've been trying to find the schematics for the water system so he can try and possibly get to it and maybe fix it. But we would like to know if there is a shut off for just the shower so they can at least have the water to the rest of the RV.

My son is using it in Florida and I'm in Michigan. He said that there was a lot of water. More than from a drip. I can't find any schematics for the water system so I can at least tell him where to look. He's working 12 to 16 hours a day and just doesn't have much time after work. And to get an RV repair there is going to be a few weeks. Tried calling Heartland but no answer and they haven't returned my call yet. It's been a week now.

There are no separate water runs in the RVs. There is NOT anyway to isolate the shower water inputs from the rest of the rig. Unlike newer houses there isnt a maniblock type setup for the water supply system. Basically these rigs are hand built one at a time. I really doubt there is a plumbing schematic anywhere, especially for a RV as old as the 2008 your describing. I have worked on mine for years, there pretty basic once the basement walls are taken down. You would see the hot(red) and cold(blue) pex supply runs which are 1/2 inch these days, and of course the drain pipes are all out in the open in a fifth wheels basement area. You could just call a plumber for your issue, its very basic set up in an RV.

Identify the supply lines to the bathroom, cut them and install Sharkbite valves. That way you can shut off the water to that area only until you can fix the leak.
