View Full Version : Recipe for HEAVENLY SALAD

This recipe makes alot - I usually make half the recipe.

1 lb. box/bag of Acini de Pepe pasta

Cook with 1/2 tsp of salt.
Rinse, drain & set aside.

2, 15oz. cans of pineapple (chunks or pieces)
2, 15oz. cans of other fruit (recommend peaches)

Drain & SAVE juice.

3/4 cup of sugar
2 Tbsp of flour
2 well beaten eggs

Combine juice, sugar, flour & eggs in medium
saucepan - cook over medium heat - mixture
will thicken slightly.
Mix with cooked pasta, cover & refrigerate

2, 8oz. Tubs of coolwhip

Mix pasta mixture with coolwhip & fruit.
Chill and serve.

The food at the AlaMissibamasippi (I think) Rally potluck was awesome!!!! Either that or I was awfully hungry.
