I think the check valve would be a good place to start. Very strange. I would try tapping on the check valve once you have lost pressure and see if it comes back. The check valve will be on the back side of the UDC right where the fresh water hose connects.

From what I understand, your tank can read 1/3 and still not be enough water to be above the take-off point for the water pump. Interestingly enough the 1/3 and empthy sensors are almost at the same point. I suggest adding some more water to the tank and try your pump again.

I agree with Bob that there appears something amiss with the icemaker. It may have a ground fault only when the relay for the ice maker kicks in. GFCI's are very sensitive and will trip long before a circuit breaker does lessening the damage done. Best to have a service guy look at.

I suspect that the water line from the pump to the water tank is frozen. The only that I can suggest is to crank up the furnace to try to get underbelly warmer. Try blocking your furnace ducts upstairs in the unit to force more warm air underneath. It is apparent in some units that not enough...

I love automation - this sounds like a great idea. In fact I like your idea about an access hole. If I make one big enough, I should be able to reach in and stick on a heater pad on the tank.
Dual pane windows are highly recommended. I was a little hesitant about it because of the extra weight but I'm sure glad I got them. Especially during the last couple of weeks of cold weather. The extra weight is not huge though - only about 150 pounds.
