Has anyone found a diagram or manual with part numbers? I need to replace the rubber gasket seal on our Insignia freezer door

Have you tried websearching the model number (followed by "parts manual" usually posted on the refrigerator inside walls or door?
There are also a few complete all brand appliance parts companies doing business on the internet. Knowing the model number ( and maybe serial number) of the appliance is basic to these searches. There are "universal" refrigerator door gasket kits on E-Bay that you cut to size with scissors.
