I think the check valve would be a good place to start. Very strange. I would try tapping on the check valve once you have lost pressure and see if it comes back. The check valve will be on the back side of the UDC right where the fresh water hose connects.

From what I understand, your tank can read 1/3 and still not be enough water to be above the take-off point for the water pump. Interestingly enough the 1/3 and empthy sensors are almost at the same point. I suggest adding some more water to the tank and try your pump again.

I agree with Bob that there appears something amiss with the icemaker. It may have a ground fault only when the relay for the ice maker kicks in. GFCI's are very sensitive and will trip long before a circuit breaker does lessening the damage done. Best to have a service guy look at.
