Booth seat.

How hard is it to take out the booth seating. I want to replace it with a small table

Just keep taking out screws until it comes out.

The hard part is if you want it to come out nicely without any cracks. They often build from the inside out stapling boards in to hide screws. Getting those boards out without cracking them can be challenging.

Once you change it out, what plans do you have for the old booth set?
People are always rebuilding older RV's; you may be able to sell it and recoup some of your cost.
