If you attended the 2023 Indiana Chapter Rally this year, you may had the privilege (or missed out) Nick and Dar Hanck's delicious crock pot oatmeal! No worries, Dar graciously shared her recipe:

Ingredients:
For the fruit mix:

  • 2 tablespoons brown sugar or more to taste
  • 1.5 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 medium apples cored, sliced and cut into bite-sized pieces
  • 1 cup sweetened dried cranberries OR raisins OR craisins
  • 1/4 cup butter sliced
For the oats:
  • 2 cups old-fashioned oats uncooked
  • 2 cups water
  • 2 cups apple juice
  • 1/4 teaspoon salt
Instructions:
  1. Prepare fruit: Mix brown sugar, cinnamon and nutmeg in a medium mixing bowl. Add apples and cranberries and toss well to coat. Spray a 3-4 quart slow cooker well with cooking spray (IMPORTANT), or use a liner. Transfer the fruit mix into the slow cooker. Evenly dot with the butter slices.
  2. Prepare the oats: Add oats, water, apple juice and salt to the mixing bowl and stir well. Pour over the fruit mixture in the slow cooker. Do not stir!
  3. Slow cook: Cover and cook on low for 6-8 hours. Stir before serving or spoon oatmeal into bowls and top with fruit mixture. Serve with a splash of milk if desired.
 

China-Inspired Crock-Pot Oatmeal​

Ingredients:

  • 1 cup steel-cut oats
  • 4 cups water or unsweetened almond milk
  • 1/4 cup goji berries (a popular superfood in China)
  • 1/4 cup chopped dried jujubes (Chinese red dates)
  • 1/2 teaspoon ground cinnamon
  • 1-2 tablespoons honey or rock sugar (optional)
  • Toppings: sesame seeds, crushed almonds, or fresh fruits like sliced pear
Instructions:

  1. Add the oats, water (or almond milk), goji berries, jujubes, and cinnamon to the Crock-Pot. Stir to combine.
  2. Cook on low for 6–8 hours or on high for 3–4 hours, stirring occasionally if possible.
  3. Sweeten with honey or rock sugar before serving, if desired.
  4. Top with sesame seeds, almonds, or fresh fruit for added flavor and texture.
