For our new 3585 we chose white, as shown in your video. The front is grey. We like the look of it. We chose white for a couple of reasons but your thinking re heat also sounds reasonable.

Our last trailer was grey (a Greystone, go figure) and we wanted a change. Our truck is white and the white Bighorn is a pretty good match, according to my wife. Other than that we feel the white will be a bit more timeless. All really just personal preferences.

We snowbird in Florida - it's been a warm March - temps 10 degrees higher then normal, most days I end up turning our second AC on to keep our WHITE Bighorn interior temps around the upper 70's. As much as I love the colors on that color chart for the paint jobs I know they would make this trailer hotter. I don't regret the White.
Last year we stayed until first week in May - It was hot.
