Dump all of your tanks first. Easy way to figure out your tanks and plumbing is to use different food colors. Mix in a 5-gallon bucket and dump down a drain. Then drain the tank.

CO detector
12vdc radio display is on
emergency brake break-away switch (make sure this isn't activated)

When you check the power from the converter to the batteries, IF there is no power:
there are fuses on the converter to protect from reverse polarity when hooking up the batteries.
Your new batteries could also be bad, from the converter not charging.
We don't have this issue with our rig. The header is right down on top of the fridge, and I have installed shorter screws into the front feet of the fridge.
The header board is sitting about 11" back from the front of the door edge.

My thoughts, the truck is too small to handle the trailer, especially in mountains. Towing is one part of the towing equation, stopping is the other part. Trailer brakes have to function properly along with the truck braking system to stop the rig.

Your 2 water valves are, 1 for the black tank (sewage), and the 2nd for the grey water tank. When you dump, the black is first, so you use the grey water to clean the hose & piping of sewage.
