I’ve looked at the info but can’t figure out how to use the electric only on the water heater. We have a 2011 Big Country. I’ve looked and can’t find an electric switch on the inside for the water heater.

Depending on your model you may have a cabinet near the entrance door. There should be a residential style light switch that has a red toggle that lights up when turned on. That would be for the 120 volt side of the water heater.
You may also have a small rocker switch on the water heater itself. These are prone to failure and might need to be replaced. A couple bucks at Home Depot.

No switch inside that I can find other than the gas switch.
Outside switch is supposed to be secondary from everything I’ve seen. We tested it and it’s getting power.
Still no hot water on electric only.

I'd expect a 2011 Big Country to have a wall switch like the one marked "awning receptacle", that illuminates when switched on.
If you're getting 120V AC at the secondary (rocker) switch outside, in the lower left corner, then the electric side of the water heater is getting power, even if you can't find a switch inside. Try pressing the reset buttons on the water heater.
If that doesn't help, our Water Heater Troubleshooting guide (assuming you have a Suburban unit), will step you through finding the failure, with photos and diagrams.

Figured it out- the switch labeled for the awning is the water heater…lol
