1. The long silver replacement part recommended by Norcool is the actual LP gas burner orifice. It sounds like Norcold has added more flame slots for a bigger, hotter, LP flame.
2. The cardboard on the outside back is to keep rising heat exchange air from going in between the refrig fins and the back of the refrig enclosure, thereby bypassing the heat exchange cooling fins. Proper "vent air" airflow is VITAL to good ammonia evaporative refrigerator operation, especially in hot climates.
