It sounds like the 50 amp auto reset 12 volt breaker needs to be replaced. You will find that breaker located in a bank of 12 volt breakers located near your battery. Follow the heavy red wire from the pump to locate the correct breaker.

Just about two months ago I replaced my skylight.
Remove the screws, #2 square drive, and carefully scrape the caulk with a plastic scraper.
There should also be a layer of butyl caulk under the lip of your skylight.
Be sure to have a roll of butyl caulk and a tube of black self leveling caulk...
Yeah, a 30 amp service could be a problem but there are ways around that.
Other options would be a portable AC unit or a small window AC, I've seen that a few times.
Those options would probably necessitate the use of a 20 amp extension cord.

I'm not sure that your AC can keep up in 100° temps. Your rig is 32 feet long, not huge but still pretty good size.
If Texas is where you'll be doing most of your camping I would suggest a second AC. Then maybe. I live in Wisconsin and would not be without a second AC.

If the water pressure is 100 psi at the spigot then yes you absolutely need a water pressure regulator. I'm guessing it's unknown so a regulator should be in place. Your RV plumbing is rated for something like 55 or 60 psi max.
Don't cheap out on a regulator get an adjustable one. About $25...
Since you have multiple leaks occurring makes me wonder if you are using a water pressure regulator. Are you?
And I think your repair guy is wrong about the hoses being old and brittle.

It sounds like your converter/charger is not charging the battery.
As Bill, wdk450 mentioned there is a manual reset 12 volt breaker that could be tripped. Somewhere near the battery you should see a bank of 12 volt breakers covered with red rubber boots. Feel along the edges for a tiny reset...
If you have power to run a charger you might instead consider one of these to operate your on board converter/charger. Any RV dealer should have one.
Won't run your AC but will keep the 12 volt items working.

Yes you can just charge with a battery charger. Preferably a smart charger.
You could just run off the charger and leave it hooked up and not worry about depleting the battery.
You could also get an adapter to run the onboard charger using the shore cord.

Yes that frame looks pretty rusty.
Have you been on the roof to inspect the roofing and caulking?
That sidewall crack is almost always an indication of what's known as frame flex, broken welds.

Looking closely at your service panel it is wired correctly.
The first duplex breaker 15/20 amp, ceiling fan/ front AC is on L1. The second duplex breaker 15/20 slide out/ main AC is on L2.

It's not a big job, I've done two so your tech should have no problem.

If you are not the original owner of your rig the AC may have been replaced once already. Or a Fantastic Vent was replaced by an AC.
Some AC units are controlled by a wall thermostat, remote, or the controls are on the unit itself.

The first thing you need to do is seal every little access point. You can get rid of the mice with simple peanut butter baited traps but if you don't seal it up mice will continue to move in.
