Everyone's different. We like having an itinerary knowing where we'll be when. We usually have visits that we schedule with friends and work out a route around that. We make reservations and have only had issues with cancellations in Colorado...
Dirt daubers got us on one of our boats, so now we check for them and wasp nests routinely. We seem to get a lot fewer since we put flea collars in the propane areas.

When you're looking at the gears, look for anything that can impede its operating. A lego was stuck in ours once. Also, ours has molding below the refrigerator that was not clearing a heat vent after the lego incident. Check that too. Good luck.

Yep, been there, done that (switch Fahrenheit to Celsius). Happened when one of us pushed the up and down buttons at the same time. Switched it back and all the planets realigned and we had cool air.

Big Horn is also a full-time trailer. We've been in temps approaching 0 as well as over 100 and stayed comfortable in our Big Horn. We did opt for the Yeti package and double panes windows which make a big difference summer and winter.
There are thermostat manuals in the tools section. Look there for your manufacturer. You might need to look around for the correct one. I know on our Dometic, we push the +&- keys at the same time to toggle through settings.
There was no other trailer that you could purchase in lieu of this one? You say that Heartland knew of the issues but didn't care. Was this based on the decision for you to not come to the factory?
We still don't understand why you completed the purchase on this trailer with all the enumerated issues. Didn't you find these on your PDI? Did you do a PDI? Did you get the selling dealer to compile a list of deficiencies that you both signed in acknowledgement?
Over a period of time, the trailer can get slightly off level. You notice it if your doors don't remain open usually, so a manual adjustment is needed to bring it back.
