You definitely need to find out what your pin weight is. The GVW of our BC dictates we could tow with a SRW, the pin weight of our BC dictates we need a DRW.
I would not recommend deploying the slides if your rig is not level. We have on occasion extended them in a parking lot, ie flat surface, but we would never feel comfortable extending them until the rig is level otherwise.
Be careful with those K&N filters. In order to increase airflow on a stock vehicle, filtration needs to be diminished. Even the fine print from K&N states that their filters filter better as contaminates are collected. In my mind that means dirt is needed to filter dirt. Not a good thing. Also...
IMO a facility checking the end result is a waste. Letting the workers slow down and then do inspections throughout the build is the only effective way to make an attempt at quality control.

We try to stay between 250 and 300 miles a day. That number increases when we have a final destination in mind where we are going to stay awhile, but not often. We also usually only travel on Sundays, and we usually stay two weeks whenever we can.

Yes we drove that stretch a couple of years ago. It has a few ups and downs and is curvy in places but is a very easy drive IMO. I think someone could spend all day giving you suggestions of things to see. In the mountains wherever you go you will not be disappointed.
