Although Lippert does not recommend it I think most people use the level up to change tires. I know I have and recently did what you are proposing, take two wheels off from one side and took them in for new tires.

To remove that shelf you will need to remove the "floor" of the shelf. It's held on by small staples. Take a fine blade and pry it up.
Once removed you will see screws holding the shelf to the wall.

But you will most likely have to remove the doors from the w/d closet.
If you have the Splendide brand then remove the plastic panel on the bottom front to reveal the attacking hardware.

If your a bit handy you could drop the coroplast from the bottom of your rig and replace the flex ducting.
Then you need to mouse proof the rig. Those little critters can get in the smallest of openings.

Your first AC unit is either 13,000 or 15,000 btu.

The first thing I would do is check the source. Do you have power on both legs going to your coach? Coming out of your EMS?
Then check your breaker panel. Did you reset the main breaker(s)? Use your meter to check the incoming power to the main breaker(s).

If your concerned about putting a couple holes voiding your warranty, don't be.
But be sure to seal everything up with caulk. Any damage caused by a water leak at that area may not be covered.

If the tray does not come with the risers you can use a piece of 4x4 trimmed a little bit to fit.
As others have said, it's a nice thing to have. And, if your doors are wide enough on both sides of your coach you can get a tray that slides both ways.

Black meter wire = - neutral (com), red = + positive.

I can't identify where your vacuum breaker is located but normally they can be accessed somewhere. Maybe behind a panel or even behind the medicine cabinet. Do you have an access port in your shower? Look there.
